At my former company, we would export the channels to XML after a code change then manually check them into source control. Since it's an XML file, the diff tools work reasonably well and give a general idea of what was changed.
We even went so far as to pin the production version, check it out, make changes, test, check in new version. Once the code is actually deployed, we unpin it.
This way anyone doing "get latest" would always get what was in production.
